Introduction

The Peri Peri Sauce is a classic hot sauce that goes with basically any protein. Despite it being quite hot it still has a great balance with the sweet and sour taste of the bell peppers and lemon juice. It is very simple to make and you literally just need to add everything into a blender!

It can be universally used, it even works as a marinade for meat. You can adjust the amount of chili if you like it more or less spicy, it should have a nice spicy punch at the end though.

Peri Peri Sauce

Steps

  1. Cut and prepare all ingredients according to directions.

  2. Add all ingredients in a blender and mix until everything is finely chopped and has a saucy consistency.

  3. Pour into a saucepan and let simmer over medium heat for 20 minutes while stirring ever few minutes to prevent the sauce from sticking.

  4. Adjust seasoning if necessary.

  5. Pour into Jars/Bottles and keep refrigerated for a month or more.

Ingredients


  • 1 head of garlic, peeled and roughly chopped or crushed

  • 2 red onions, peeled and roughly chopped

  • 2 red bell peppers, seeded and roughly chopped

  • 3 ripe tomatoes, roughly chopped

  • 1 scotch bonnet pepper, seeded (any other chili works too, you can add more for extra spicy)

  • 2 lemons, juice and zest

  • 2 bay leaves

  • 80 ml red wine vinegar

  • 4 tbsp extra virgin olive oil

  • 2 tbsp brown sugar

  • 1 tbsp sea salt

  • 1 tbsp dried oregano

  • 1 tbsp sweet paprika powder (or smoked works as well)

  • 1 tsp black pepper
